Wine pearls from Kubru

The company Kubru has introduced new, inspirational ideas with its edible pearls both in the kitchen and in the food services industry. The pearls - which were initially just filled with red and white wines - quickly developed into a popular culinary treat in some of the top restaurants. Kubru has now extended its range by adding several new varieties and is offering new pearl flavors with sophisticated and contemporary spirits and unusual natural distillates.

Waiblingen, July 12th 2019 - It is well-known that people have a wide range of different tastes. This has always been the reason why there is a great deal of variety and a high demand for new products, especially in the food services industry. One innovation that found its way into kitchens all over the world in a very short space of time is Kubru's edible pearls.

These pearls, which are about one centimeter in size, consist of a wafer-thin wrap of alginate, which is neutral in taste and has been used in the Asian cuisine since the 17th century. Almost any liquid can be transformed into a delicate pearl using a special procedure.

Kubru is always looking for new partners with the same high quality standards and was recently able to identify several suppliers who were soon excited by the idea of transforming their fine wines and liqueurs into pearls. These include the Haider vineyard from the Burgenland and the Wageck winery from the Palatinate, the Prinz fine distillery from Hörbranz on Lake Constance, Schmid distillates from Remstal and the young entrepreneurs at "The holy bar" with their new and contemporary lime liqueur.

New partners with extensive experience in producing wines and spirits

The Haider vineyard in Burgenland, Austria, specializes in the production of high-quality sweet wines. The grapes for these wines thrive on the rare Scheurebe vines of the Sämling 88 variety and are used to make the renowned Trockenbeerenauslese. This complicated process produces sweet wines, where both the sweetness and also the various fruity aromas come to the fore.

The german Wageck winery in the Palatinate also produces unique wines that are highly regarded by connoisseurs. One of the advantages of the chalky soil near the French border is that they can produce an excellent Chardonnay. These are some of Wageck’s wines that are now available to aficionados not just in bottles but also in pearl form.

The Prinz fine distillery in Vorarlberg in Austria is also a household name amongst connoisseurs. The combination of their long-matured fruit distillates and the pearls from Kubru creates some unique taste experiences with the right dishes or cocktails. Pearls with Williams pear and cherry schnapps from Prinz have now been added to Kubru’s range.

"The Famous Steal" lime liqueur is a speciality that is relatively new and still regarded as an insider tip. This liqueur was invented in Lippstadt in Westphalia in 2011 and is conquering more and more of the most fashionable bars of Europe. According to the German saying, "sour things are fun" and adding this pearl-shaped liqueur to cocktails is the perfect example of this. It also gives sweet desserts a refreshing contrast.

One drink that has been experiencing a big comeback over the last few years is gin. Kubru spent a long time looking for a gin that met its expectations and eventually found the particularly aromatic juniper berry schnapps with the name "Eugen Gin" from Schmid distillates. But it’s not just the gin from Schmid that is special. The family business also produces small quantities of extravagant specialities such as wild rose blossom syrup. Producing larger quantities of these would be difficult, because the wild rose petals are picked early in the morning before sunrise, then soaked in water for a few days before being gently distilled. The result is a delicate bouquet reminiscent of roses and sweet fruits.

Sweet Italian grapes are the basis for the new balsamic pearls. The pearls are filled with noble Balsamico di Modena, which is produced in Vignola, at the foot of the hills around Modena. The balsamic pearls are a perfect addition to meat dishes, dark sauces, hot and cold vegetable dishes, many different salads and of course to tomato and mozzarella or caprese.

Kubru is going one step further with these new varieties in its carefully-selected collection of pearls, so that it can meet and, if possible, exceed the special requests made by its customers - chefs and barkeepers, but also private gourmets.
